Sugar

almond milk

almond butter
½ teaspoon
vanilla extract
1 scoop
stevia powder
⅛ teaspoon
sea salt
3 tablespoons
chocolate protein powder
1¼ cups
rolled oats
3 tablespoons
mini chocolate chips
⅓ cup shredded
toasted coconut
Directions
- In a small saucepan, combine sugar and almond milk over medium heat, stirring occasionally.
- When mixture comes to a boil, remove from heat.
- Cool 5 minutes, then stir in almond butter, vanilla extract, stevia powder, and salt. Transfer to large bowl.
- Add protein powder, oats, and mini chocolate chips and mix thoroughly with wooden spoon, using hands if mixture becomes too thick for a spoon.
- Using a tablespoon measure to form heaping tablespoons of the mixture, form 24 balls.
- Scatter coconut on plate and roll each ball through the coconut to lightly coat.
- Place balls on baking sheet lined with waxed paper.
- Refrigerate until firm, at least 2 hours.
