Using a rotisserie chicken makes this salad a snap to put together. It’s easiest to shred the meat when it’s warm but not hot. If using directly from the rotisserie, let the chicken cool until you can handle it; if pulling the chicken out of the refrigerator, reheat it slightly in the microwave.
