Sweet Potato and Black Bean Burgers

With sweet potatoes and a hint of paprika added to these bean burgers, you won't even miss the meat

Sweet Potato and Black Bean Burgers

Ingredients

1 cup canned
black beans, drained and rinsed
1 and 1/2 cups mashed and cooked
sweet potatoes
1 and 1/4 cups cooked
brown rice
1/2 cup
onion, minced
1
egg, beaten
1/2 cup
bread crumbs
1 tsp
smoked paprika
1/2 tsp
salt
Directions
  1. Preheat oven to 400 degrees F. Brush a sheet pan liberally with olive oil and set aside.
  2. In a large mixing bowl, coarsely mash black beans with a fork. Add mashed sweet potatoes, brown rice, onion, egg, bread crumbs, smoked paprika, and salt. Mix well with clean hands and form into 10 patties.
  3. Arrange burgers on sheet pan and brush tops with additional olive oil. Bake for 20 minutes, then flip burgers over. Bake until they begin to brown and are cooked through, about 15 to 20 minutes.
