Ingredients

1 tablespoon
natural peanut butter
1/2 tablespoon
miso
1 tablespoon
sesame oil
2 teaspoons
honey

garlic cloves, minced

Thai chilies, minced

low sodium vegetable broth
4 cups
mixed vegetables, diced
1 cup
rice noodles
1/4 cup
chopped peanuts, thinly sliced scallions, and minced cilantro, optional
Directions
  1. Whisk together peanut butter, miso, 1/2 tablespoon sesame oil, and honey in a small bowl. In a medium saucepan, sauté garlic and chilies in remaining sesame oil over medium-high heat. Add the peanut butter mixture and mix until thoroughly combined. Add the vegetable broth and bring mixture to a boil. Add vegetables and sauté until vegetables are softened, about 10 minutes. Remove from heat and set aside.
  2. Bring 2 quarts of water to a boil. Add noodles and cook until tender. Drain and toss noodles with the vegetables and sauce. Separate into portioned-out containers and freeze. To reheat, microwave on high for 4 minutes, stirring every minute until heated through. Top with peanuts, scallions, and cilantro if using.
  3. Handy Hint: The best way to reheat a meal in the microwave is on short intervals with frequent stirring so that the heat is equally distributed. If you have time to freshen up the dish, opt for quick and easy toppings like chopped peanuts or herbs. It takes about a minute to prepare so all in all, your meal took five minutes and is both healthy and tasty.
