Ingredients
1 cup
old fashioned oats
1
black beans, drained and rinsed
1.5 lbs.
sweet potatoes, cut into chunks
1 medium
red onion, chopped

medium red pepper, cored
1 cup
smoked gouda cheese
1 Tbs.
smoked paprika
1 Tbs.
cumin
1 Tbs.
cilantro, minced
1/2 cup
corn
1 Tbs.
garlic powder
2
eggs
1 Tbs.
vegetable oil
Directions
- Cook sweet potatoes
- Strain and rinse black beans, then dry with paper towel
- Cut sweet potatoes into small cubes, discard skin
- Chop onion, pepper and grate cheese
- Grind oats in food processor, to size of bread crumbs
- Add black beans to large bowl and smash
- Add sweet potatoes, pepper, corn, cheese, spices, oats, and mix together
- Whisk 2 eggs together, add to bowl and mix until combined
- Form patties, heat skillet and add oil
- Cook 5 minutes on each side
- Serve on salad or bun and enjoy!
