              Zucchini and hummus rollups
These light and refreshing rollups are as fun to make as they are to eat.
Ingredients
          1, thin sliced
      
            zucchini
      
      1 cup homemade or store-bought
      
            hummus
      
      1 cup
      
            cooked quinoa
      
      1
      
            red bell pepper, sliced
      
      1
      
            carrot, sliced
      
      Directions
              - In a small bowl, combine hummus and quinoa. Spread about 1 tablespoon of filling onto the slice of zucchini. Arrange pepper and carrot slices at zucchini end and roll up like sushi. Repeat for the remainder of the zucchini slices. Serve immediately or refrigerator until ready to serve.
