  1. In a small bowl combine lemon juice and shallots
  2. While lemon juice is breaking down shallots, use a food processor to shave Brussels sprouts

  4. Whisk honey and Dijon into bowl with lemon juice and shallots until emulsified
  5. Add to Brussels sprout mixture in large bowl
