Strawberry arugula salad
This salad is a great starter or an entire meal with a nice piece of chicken or salmon.

Ingredients
1 bag
arugula
2 cups
spinach (optional)
1-2 cups
strawberries
1/2 cup
chopped pecans
1/4 cup
hemp seeds
1/2 cup
goat cheese crumbles
sprinkle
Parmesan cheese (optional)
Directions

Add nuts to skillet and toast on low heat until slightly browned (no fat or salt needed).

Clean arugula, spinach and strawberries.

Chop strawberries as desired (cubes or slivers).

Add greens, strawberries, hemp seeds and pecans to large bowl, set aside.

Make dressing: Combine all ingredients in small bowl and whisk until dressing thickens (emulsifies).

Add dressing to salad and mix until combined.

Plate salad and sprinkle evenly with cheeses.
