Falafel with lemon tahini dressing
Crunchy, flavorful falafel paired with a tangy lemon tahini dressing makes for a perfect plant-based meal.

Ingredients
1.5 cans (15.5 oz.)
chickpeas (15-ounce), drained and rinsed
3 large
garlic cloves, minced
1/2 cup
red onion, diced
3 tbsp
fresh lemon juice
1/4 cup
cilantro, minced
1/4 cup
parsley, minced
1/4 cup
ground flax
1/4 cup
panko (Japanese breadcrumbs)
1 tsp
cumin
1/2 tsp
red pepper flakes, optional
Directions
- Add chickpeas to large mixing bowl. Mash with potato masher, make sure not to mash into paste.
- Add in garlic, onions, lemon juice and herbs until well combined.
- Stir in ground flax, panko and dried cumin and red pepper flakes.
- Preheat skillet over medium-high heat.
- Shape dough in to 1/4 cup balls. Cook in prepared skillet for about 5 minutes per side or until golden.
