Ingredients

2-3 large
eggplants, peeled sliced thin
1/2 cup
olive oil
3
garlic cloves
Sprig of
Parsley
Balsamic
white vinegar
Directions
  1. Pre-heat oven to 400°F. Spray baking sheet
  2. Place slices of eggplant on a baking sheet
  3. Watch for ends to get a little dark, then remove (approx.-20 min)
  4. Place slices in shallow baking dish with enough olive oil to cover and 3 tablespoons of vinegar
  5. Sprinkle with parsley
