Ingredients

2 cups
pitted dates
1/2 cup
shredded coconut
1/4 cup
almond butter
1
apple, thinly sliced
Directions
  1. Place dates and coconut in the bowl of a food processor. Process until mixture is combined, about 1 minute. Press mixture into an 8"x 8" square baking dish that's been lined with wax or parchment paper. Refrigerate for 10 minutes.
  2. Remove the date "crust" from the fridge and spread with almond butter. Cut into eight servings and top each with a fan of apple slices.
  3. Handy Hint: To keep the date mixture from sticking to your hands when you press it into the pan, keep a dish of lukewarm water at the ready. Dip your fingers into the water occasionally to keep them clean and the date mixture from sticking.
