              Sweet potato bites with goat cheese
Delightfully savory and sweet, these sweet potato bites topped with tangy goat cheese make the perfect appetizer or snack.
Ingredients
          2
      
            large sweet potatoes, cut into chunks
      
      1-2 tablespoon
      
            olive oil
      
      5 oz. room temperature
      
            goat cheese crumbles
      
      1/3 cup
      
            chopped pecans or walnuts (optional)
      
      1/3 cup 
      
            dried cranberries
      
      (or Balsamic reduction)
      
            honey
      
      Directions
              - Preheat oven to 425 degrees F.
 - In a large bowl, add sliced potatoes, oil, salt and pepper. Toss to coat.
 - Lay prepared potatoes on a large baking sheet. Bake for 8-10 minutes on each side or until golden brown.
 - Transfer to serving dish and top with goat cheese, nuts and cranberries. Garnish with honey or balsamic glaze as desired.
