Beet, Kale, and Kohlrabi Salad with Grapefruit Vinaigrette

Directions
- Chop kale and lettuce into bite-sized pieces.
- Chop kohlrabi, beet and carrots into matchsticks.
- Cut the grapefruit in half. Peel and remove sections from 1/2 of grapefruit.
- Place vegetables on serving plate.
- Combine juice of the other half grapefruit and the remaining ingredients in a small mason jar. Cover jar and shake vigorously.
- Place all ingredients into large serving bowl. Mix in vinaigrette and top with pepitas.
