- Preheat oven to 425 degrees F.
- In a large bowl, add sliced potatoes, oil, salt and pepper. Toss to coat.
- Lay prepared potatoes on a large baking sheet. Bake for 8-10 minutes on each side or until golden brown.
- Transfer to serving dish and top with goat cheese, nuts and cranberries. Garnish with honey or balsamic glaze as desired.
